Zion is still open to cars in the off-season. We went in early Jan and the park was very manageable driving. The snow was gorgeous, days in the 50s-60s degF, making for perfect hiking conditions.

What not to do: walk under 10ft icicles in 50 degree weather when the park service has closed that part of the trail.
Crack climbing!
Beautiful face to climb

Observation Point hike, 8mi round trip, 1200ft elevation gain. Had to acquire YakTrax snow cleats.
